I always try to shoot in full sunlight to get such vivid colours. I then have a little tweak of the contrast and colour saturation in Photoshop until I get the required result.
Do you really need that level of manual control? There are very good psuedo SLR cameras for half the price that can do comparable functions. I nearly bought one myself!
